My dad used a similar katkes at his restaurant ( Nibblers) made almost of a batter. He served them every Friday night for years with sour cream and their own homemade applesauce. Challot were also served Friday nights at the restaurant in later years.

Nope, not made with chunks. Cut the potatoes into chunks and process till very fine textured. Not grated or shredded. Try it!!
